SUMMER MEATLOAF

Ingredients for 4 people
500 gr. Minced beef
150 gr. Rice
1 ripe tomato
1 onion
3 eggs
Nutmeg
Salt
Chilli
Extra virgin olive oil
5 basil leaves
Boil the rice in salted water for 10 minutes. Drain it and season with ripe tomato cut into small pieces, a pinch of salt, two tablespoons of oil, a sprinkle of chili pepper, finely chopped onion and chopped basil leaves and let it cool. Boil two eggs in hot water for 10 minutes and let it cool. Stir minced beef with few grated nutmeg, salt and pepper, and 1 egg. In a sheet of baking paper, extending the meat, spread on it the rice and put in the middle the boiled eggs cut into slices. Roll  carefully the meat helping yourself  with the paper. Wrap the roll obtained in aluminum foil and bake it in oven at 180 degrees for 40 minutes. Cool it before cutting or you will break everything! Serve it cold with a salad of tomatoes, capers,spring onion and fresh basil.
