Ingredients: 250 gr. white flour
10 g of fresh yeast
200 gr. Pecorino cheese

Crumble the yeast in a large bowl and add the warm water. Add two teaspoons of salt and flour and work by hand for about 10 minutes. Let rest for 2 hours in a warm place away from drafts, with the bowl covered. Knead the dough again, adding the cheese that you cut finely with a knife and a generous pinch of pepper, and make a ball. Place it on a baking pan and cover with a cloth. Let it rise for about 40 minutes, away from drafts. After this time warm the oven at 220° and cook for about 15-20 minutes, until bread is golden. Lower the temperature to 180 degrees and cook for another 15 or 20 minutes.
