  1. ZUCCHINI AND RICOTTA PIE

    For 4 people
    
    
    1 roll of puff pastry
    3 zucchini
    1 onion
    6/8 pumpkin flowers
    Fresh ginger
    250 gr. Ricotta cheese
    2 eggs
    5 slices of Emmental
    Extra virgin olive oil
    Wild Mint
    salt
    Chili pepper
    Cut the zucchini into strips, cut only the green outside and keep the pulpapart. Soak in a pan with oil, 
    finely chopped onion, add the zucchini fillets, a generous grated ginger and wild mint and bake with 
    brilliant fire for about 8-10 minutes, keeping the zucchini crispy. In a bowl put the ricotta cheese with 
    the two eggs, the zucchini pulp, salt and chili pepper and grind it all. Place the puff pasty in a baking 
    tray and place the flowers, add the slices’ cheese and cover with cooked zucchini then  spread with ricotta 
    cream. Cook in the oven at 200 ° for 15 minutes covered with aluminum paper, then open and finish cooking 
    for another 20 minutes.

  2. RISOTTO WITH SPINACH, GORGONZOLA AND CRISPY BACON

    This morning in my vegetable’s garden I found fresh spinach and I can’t resist: let’s make Risotto!
    
    
    4 people
    320 g of  rice (Vialone Nano)
    280 g of fresh spinach
    100 g sweet gorgonzola cheese
    1 shallot
    1/2 cup white wine
    1 lt vegetable’s broth
    4 slices of bacon
    1 fresh spring onion
    chilli
    extra virgin olive oil
    butter
    salt
    
    
    In a pan fry the shallots with the olive oil and add the rice and cook until crackling! In another pan, with virgin olive oil,  cook the spinach, with fresh onion cut into slices, adding a little water and a half cup of white wine, salt and pepper. After 5-6 minutes, blend up to create a cream. Go back to the toasted rice and when it takes the heat add the spinach’s cream and add vegetable broth to help to cook. In the meanwhile, fry in hot olive oil few leaves of spinach, and grill the slices of bacon ( I rolled them in a metal cone to make them stay in shape) and cut into strips the tops the fresh onion. We are ready to whisk our risotto with gorgonzola into pieces and a generous tablespoon of butter. Serve it with fried spinach leaves, bacon crispy and the onion raw

  3. SPAGHETTI WITH TALEGGIO CHEESE AND ORANGE

    350 gr . spaghetti
    1 orange
    200 grams of Taleggio cheese
    1 / glass of Prosecco
    1 shallot
    garlic
    chilli
    parsley
    thyme
    Extra virgin olive oil

    While spaghetti are cooking in salted water, in a pan with olive oil brown the shallots finely chopped , add the whole garlic and cook for a few minutes . Peel the orange and cut the peel into thin slices . Add in the pan, the orange juice, thyme , chilly and half a glass of Prosecco . Add now the Taleggio cheese into small pieces and let it melt adding few spoons of the boiling water from the pasta . Finish cooking spaghetti in the pan adding plenty of Prosecco and the finely chopped parsley . Serve with the orange peel into strips


  4. RISO BASMATI AND CO

    … I had some basmati rice left (I use it often served with vegetables in a pan), so invented this  ”recovery” pie:
    with any cup you have at home create a form of basmati rice. Cut bacon into thin slices and grill in  the oven  until crispy. Boil the asparagus (please not too much, otherwise they will be too mushy!), and season with oil, salt and lemon juice. Cut dried tomatoes into thin strips and moisten with white wine, then seasoned with olive oil and salt. Soak two slices of brie cheese in the oven and assembled the cake.
    It ’came cute and so good!


  5. ONIONS AND POTATO PIE

    Ingredients for 4 people:
    4 potatoes
    4 tomatoes
    2 onions
    ½ cup white wine
    SCAMORZA smoked cheese
    Extra virgin olive oil
    salt
    chili
    oregano
    Wash the potatoes and cut, with skin, into slices  of 2 cm. In a pan with olive oil and fry the slices of potatoes, 5 minutes per side. Cut the tomatoes into slices and let them dry in a pan for a few minutes, add salt and pepper. Cut the onions into rings and cook in white wine for 5-7 minutes. Now you can make  the pie by putting a potato slice, a tomato, some onion rings, a sprinkling of oregano. Fix it with a toothpick and bake in oven at 180 degrees for 20 minutes, add the smoked cheese into thin slices only in the last minutes of cooking.


  6. Chicken rolls filled with smoked scamorza cheese and arugula

    Chicken rolls filled with smoked scamorza cheese and arugula
    Ingredients for 4 people
    800 gr. Chicken breast, cut into slices
    1 smoked Scamorza cheese
    150 gr. arugula
    1 onion
    1 clove of garlic
    1 cup white wine
    4 sage leaves
    salt
    chilli
    Extra virgin olive oil
    Pound the slices of chicken with a meat mallet, put a pinch of salt in each slice and let stand in refrigerator. Cut  finely the onion and brown it in a pan with oil and a clove of garlic, and the sage leaves. Chop finely half of  the arugula and add it to the pan. Cook for 4-5 minutes. Cut the smoked Scamorza cheese into sticks and put a stick of cheese and a sprig of arugula inside each slice of chicken. Roll up carefully, making sure they are closed well otherwise during the cooking process the cheese will melt out of it! Place rolls in the  pan and cook over very low heat for about 35 minutes, adding the white wine, salt and pepper. Serve hot with fresh arugula without seasoning.
