  1. COLOR-FULL SALAD

    After having been thoroughly washed salads, chop it and mix together. Add the thinly sliced ​​onion and grated fresh ginger. Prepare the seasoning with oil, chopped anchovy fillets, salt and pepper and season the salad. Just before serving, add the raisins, pine nuts, toasted bread and the orange, cut into cubes


  2. SPAGHETTI WITH RED CHICORY

    Ingredients for 4 people:

    350 gr. of spaghetti
    100 gr. of bacon
    1 red chicory from Treviso
    1 onion
    2 egg whites
    pink pepper
    salt
    oil
    In a frying pan with oil, fry the onion finely chopped and bacon cut into small cubes. When the bacon is crispy, add the chicory and cook for 4-5 minutes. Whisk the egg whites until stiff. Boil the spaghetti in salted water and when cooked, put in a pan with the radicchio. Mix well the spaghetti with the seasoning and remove from heat. Now add the egg whites and stir carefully. Serve spaghetti with a few pink peppercorns.


  3. SHRIMPS’ SALAD

    Ingredients for 4 people:
    30 shrimps
    1 clove of garlic
    A spoonful of brown sugar
    chicory
    lettuce
    arugula
    chicory
    chive
    basil
    1 red onion
    Extra virgin olive oil
    Lemon juice
    salt
    black pepper
    Shell the shrimp. Cut the garlic into small pieces and brown it in a skillet with a tablespoon of olive oil, add the peeled shrimp and a teaspoon of brown sugar, and cook for a few minutes with  brilliant fire. In a bowl place a finely chopped red onion with few drops of lemon juice and a pinch of salt. Carefully wash the salad and mix it the basil and chives. Dress the salad  with extra virgin olive oil, salt, lemon juice and black pepper. Put the salad in a serving dish, put on the top shrimps and their liquid and onions.


  4. TURKEY SALAD

    Ingredients for 4 people
    500 gr. Turkey breast
    1 red  chicory
    A tuft of arugula
    6-8 basil leaves
    A sprig of rosemary
    A clove of garlic
    1 lettuce
    1 red onion
    5 sun-dried tomatoes
    ½ lemon
    4 ripe tomatoes
    salt
    4 ripe figs
    Extra virgin olive oil
    balsamic vinegar
    Cook the chicken breast steamed, cut into strips when cooked. In a pan fry in olive oil, a clove of garlic and the rosemary. When the garlic is brown,season the turkey’fillets with this flavored oil, add salt and pepper and lemon juice. Wash the salad (red chicory, lettuce and arugula) and cut it, season  with oil, salt and balsamic vinegar. Wash tomatoes and cut them into wedges and toss with oil, salt, basil and sliced red onion. At this point put the salad on a plate, put over it turkey fillets, dried tomatoes . Add the tomato salad and serve the salade with a ripe fig and a slice of lemon.


  5. BREAD SALAD UMBRIA STYLE

    300 gr. Stale bread
    1 cucumber
    1 onion
    3 tomatoes
    Half a red pepper
    half courgette
    A tuft of arugula
    5 leaves of lettuce
    5 leaves of radicchio
    10 grains of red grapes
    Extra virgin olive oil
    salt
    chilli
    Wine vinegar
    Soak the  stale bread in water until it becomes completely soft. Squeeze well and crumble it into a bowl. Add all vegetables cut into small pieces. Season with oil, salt, vinegar and pepper and let stand in refrigerator before serving.


  6. TOASTED BREAD WITH RED CHICORY SAUCE

    Ingredients (4 people):
    8 slices of bread
    1 radicchio travigiano
    1 leek
    salt
    chilli
    balsamic vinegar
    chive
    garlic

    Toast the bread and spread with the garlic.
    In a pan fry the thinly sliced ​​leeks thinly chopped and radicchio cut into strips.
    Cook for about 10 minutes ,add the balsamic vinegar, salt and pepper, and place the mixture on toasted bread.
