  1. RICE PUDDING

    200 gr. Of rice

    1 lt. Milk

    3 eggs plus 1 yolk

    150 gr. White sugar

    Butter

    1 lemon

    1 pinch of salt

    Icing sugar

    Boil the rise in the milk with the lemon’s rind, until the liquid is completely gone. Cool it and add the eggs and the sugar. Butter an oven pun and spread it with two spoons of sugar. Put the rise and cook at 180° for 30 minutes.  Serve it with icing sugar on the top


  2. RICOTTA CHEESE AND PEAS PIE

    Ingredients (4 people):

    200 gr. Flour
    3 eggs
    15 gr. Yeast
    ½ cup of milk
    200 gr. Ricotta cheese
    50 gr. Grated parmigiano cheese
    100 gr. Peas
    100 gr. Cooked ham in slices
    1 clove of garlic
    Salt
    Chilli
    Single serving baking molds
    Put the flour into a bowl and combine it with 2 eggs, warm milk and yeast and work the dough with a whisk. Let it rest for an hour. In the meanwhile, combine  the ricotta cheese with the  grated parmigiano and a pinch of chilli. Cook the peas in a frying pan with oil and a clove of garlic, adding water if necessary. When the dough has risen, put a spoon of it in each mold and bake for 10 minutes in the oven at 180 degrees. After 10 minutes’ cooking, put a layer of ricotta cream, a slice of ham, a spoonful of peas and a tablespoon of beaten egg. Let’s finish cooking in the oven for 15 minutes and serve them with few drops of balsamic vinegar.


  3. WILD CHICORY PIE WITH PURE ‘OF FAVA BEANS

    Ingredients (4 people):
    250 gr. Flour
    2 eggs

    25 gr. yeast
    30 gr. Grated pecorino cheese
    A pinch of salt
    Chilli
    Extra virgin olive oil
    1 clove of garlic
    2 glasses of water
    80 gr. Boiled wild chicory
    12 aluminum molds
    butter
    Stir the flour with the yolks of two eggs, add salt, grated pecorino cheese and the yeast. And two glasses of water. Whip the whites of two eggs and add it to the mixture, being careful to mix it gently. Let it rest for 30 minutes. In the meantime in a pan with olive oil brown the garlic, and add the chicory, with some salt and pepper. Butter the molds and put in it a spoon in the mixture, and a generous spoonful of chicory. Bake at 200 degrees for about 20 minutes. Serve it warm with fava beans cream. (You can find  the recipe at VERDURE category.)
    The filling can be done in many different ways: with cherry tomatoes, anchovies, capers and oregano, or with soft cheese and spicy salami, or with bits of ham and arugula. …

  4. EGGPLANT CROUTONS

    Ingredients (4 people):
    2 eggplants
    corn flour
    1 egg
    a bunch of spinach
    chive
    1 clove garlic
    extra virgin olive oil
    salt
    chilli
    1 tomato

    Cut the eggplant until you have a rectangular eggplant like in the picture.


    Then cut it into slices about 3 cm. Wet the slices in warm water, and then passes into the corn flour. Cook the slices in the oven at grill (on wax paper), for about 10 minutes. In the meanwhile boil one egg in boiling water for 10 minutes,..let it cool before cutting into slices (so it does not break …). Blanch the spinach in boiling water for a few minutes, then dry and fry in a pan with the garlic and extra virgin olive oil. Now we can create our croutons:  few slices of eggplants with on a slice of tomato, a slice of boiled egg, a small bunch of chives, a pinch of salt and pepper. On the others with the sauté spinach.


     


  5. POTATOES PIE

    Ingredients (4 people)
    6 medium sized potatoes
    2 eggs
    Breadcrumbs (if you have celiac use the corn flour)
    Fontina cheese
    Salt
    Chilli
    Baking molds
    olive oil
    Boil the potatoes in hot salted water. When ready peel it and mash, add eggs, salt and pepper. Put some oil in the molds and sprinkle with bread crumbs. Put the puree into molds and bake at 180 degrees for about 20 minutes. When they overturned, still hot, grate over the fontina cheese.

    la faccio un pochino più leggera, così mi sento meno in colpa quando la mangio!

    Ingredienti (4 persone)

    1 uovo

    1 bicchiere di olio di mais

    aceto

    sale

    Usiamo il frullatore elettrico a immersione, altrimenti ci invecchiamo! Mettete,n un contenitore alto, un uovo intero un pizzico di sale e un cucchiaino di aceto. Cominciate a frullare e aggiungete l’olio lentamente. Quando la maionese ha raggiunto la consistenza dovuta è pronta, se risulta troppo liquida aggiungete altro olio, se invece è troppo compatta l’aceto.
