  1. LEMON’ SAUCE

    1 lemon

    parsley

    One tablespoon of mustard

    salt

    sugar

    oil

    Half a glass of water

    Put the water in a saucepan with the lemon juice the zest cut into strips (making sure to carefully remove the white). Bring to a boil and add a pinch of salt, a teaspoon of sugar, finely chopped parsley and mustard. Mix well and after about 6-8 minutes of cooking remove from heat and add a drizzle of olive oil.


  2. SPAGHETTI GARLIC,OIL AND RED CHILI PEPPERS….my style

    Beppe, our magical director, made delicious home made spaghetti without eggs (here is the recipe), and we serve them as follows:

    2 cloves of garlic

    Extra virgin olive oil

    2 red dry chilli peppers

    Water Cooking

    Marine salt

    350 gr. Gr Of Long Pasta

    A sprig of parsley

    saffron

    Lemon Juice

    250 gr. Of cream

    Breadcrumbs

    Lemon Peel

    Parmigiano cheese

    While the pasta is cooking, wipe the garlic and cut into thin slices, fry in a pan with olive oil and crushed red pepper. Let it  brown slightly, add the pasta and half cup of the cooking water and a bit ‘of parsley. Whip the cream, adding a pinch of salt, saffron and  the juice of half lemon.

    When the pasta is almost cooked, sauté it in the pan with the oil sauce,  add the breadcrumbs and grated lemon rind .. Serve the pasta with the flavored cream


  3. Salad of green beans with a sauce of wild mint

    Ingredients (4 people):
    400 gr. Green beans
    wild mint (a lot!!!)
    half Lemon
    Orange rind
    1 clove of garlic
    ½ cup extra virgin olive oil
    Salt
    Cook beans in salted water for 15 minutes, when ready pass them immediately under cold water, to avoid they become yellow and also they will remain crispy. Put in blender the oil, the orange rind, the juice of half lemon ,the wild mint, the garlic and process until creamy.


  4. CARPACCIO OF ZUCCHINI

    Ingredients (4 people):

    2 zucchini mid size
    Extra virgin olive oil
    Salt
    Lemon
    Chili and pink pepper
    Wash the zucchini and cut into strips as thin as possible. Put them in a tray and sprinkle with olive oil, lemon juice, salt and pink pepper and let it rest for 1 hour. After an hour it will be ready to serve them with a sprinkling of parsley or on the top of a delicious salad with few drops of balsamic vinegar.

     


  5. CHICKEN BITES IN LEMON SAUCE

    Ingredients (4 people):
    500 gr. chicken breast (cut in small cubes)
    6 cherry tomatoes
    1 lemon
    1 clove of garlic
    4 leaves of sage
    Salt
    Chilli
    Extra virgin olive oil
    10 Black olives
    Marinate the meat for at least 4 hours, with salt, lemon juice and chilli. When the meat is marinated, cook it in a pan with olive oil, olives, sage leaves and chopped tomatoes, with a brilliant fire for about 20 minutes.
