Zucchini pie

INGREDIENTS: (4 people)
FOR THE PIZZA:
500 GR. FLOUR 00
40 GR. yeast
300 ML. WATER
SALT
EXTRA VIRGIN OLIVE OIL
FOR THE TOPPING:
1 onion
1 clove garlic
4 zucchini

1 glass of white wine
CHIVES
SALT
CHILLI
50 GR. Grated Parmesan cheese
EXTRA VIRGIN OLIVE OIL
FOR THE BESCIAMELLASAUCE:
50 GR. BUTTER
50 GR. FLOUR
½ liter of milk
SALT

Mix  half of  the flour, with water, yeast, a pinch of salt and a pinch of sugar,: it has to be a liquid mixture: let it rest for at least 1 hour. Cut zucchini into sticks, removing the inside. In a pan with olive oil sauté a clove of garlic, the  chopped onion, add zucchini and let it cook for 15 minutes, adding  the white wine, salt and pepper. In the meanwhile we prepare besciamella sauce:, put the butter in a saucepan and slowly add the milk and and the salt, and stir it until the mixture is creamy. Is now time to finish to prepare pizza, adding the remaining flour to create a compact pastry. Roll out the pizza in a baking pan with oil, put up the zucchini and a rich spoonfuls of besciamella sauce, sprinkled with Parmesan cheese and bake at 180 degrees for 30 minutes.
