Ingredients for 4 people:
700 gr. veal (leg pulp in one piece)
1 lemon
white wine
salt
laurel
Black pepper grains
chilli
White wine vinegar
Extra virgin olive oil
celery
basil
cherry tomatoes
carrots
savoy cabbage
pepper
onion
Simmer for 2 hours, the meat in salted water with 4-5 grains of black pepper , lemon juice, 3 laurel leaves. When cooked cut into thin slices and arrange on a serving plate. Dress salads all thinly sliced, with extra virgin olive oil, salt, vinegar, pepper and arrange over the meat. Cover with plastic paper and leave to marinate in refrigerator at least an hour before serving.
