  1. let’s start with Christmas parties!

    Yesterday evening first party for Christmas .. and we did not miss anything!

    Spring rolls with spicy sauce, octopus salamiprawns with toasted potatoes,spaghetti with mussels, salmon steamed with sauce and broccoli, and Pandoro stuffed with cream and whipped cream.

    Hooray for Christmas!


  2. the adventure goes on…

    …….. And today with the boys, Remo, Henry, Vincent and Diego (two were excused!) we prepared the HOME MADE PASTA. We made ​​two different mixes: the first is particularly suitable for stuffed pasta (see ravioli) and the second for the cut pasta noodles,noodles, pappardelle, etc. (see spaghetti guitar). And as usual, the lesson ends with tasting!

  3. LET’S START OUR ADVENTURE!

    Last Thursday  with Diego, Remi, Sandro, Vincenzo, Antonio and Enrico we began our adventure in the kitchen. Some of them already ”manage” in the kitchen, others are able to obtain the daily meal, but they are all curious, collaborative, and very very funny! To know they capabilities we organized  a dinner with some friends and we cooked: spelt soup  and artichokes, penne alla Norcina, veal tagliata with a reduction of Montefalco red wine, and  parsley potatoes. The result was very satisfactory and we will  replicate very soon!


  4. TREVI 29 – October 30: THE HISTORY IS SERVED!

    Saturday and Sunday, with a lot of nice people!, we cooked and ate and chatted two ”poor” ingredients of traditional Umbrian recipes: chickpeas and fagiolina del Trasimeno(Trasimeno beans).
    Important legumes in the diet of our ancestors-rich of proteins were called ”the meat of the poor,” and can still be interpreted to be rediscovered, to build traditional and delicious dishes. While cooking I enjoyed telling my guests, the stories of the past, related to food and farming traditions, ancient cooking techniques, the importance of sharing food …. And I had a great audience who likes to cook, laugh and joke and above all eating!

    With Marco (trusted and good cook), there had moments of reflection (!?),but then we decided to
    prepare them as follows:
    FRIED CHICKPEAS
    CREAM OF TRASIMENO’  BEANS
    PASTA AND CHICKPEAS WITH “BATTUTO”
    OLIVE  UMBRIA STYLE
    CANAPEE’ WITH  TRASIMENO BEANS

  5. What wonderful things women can do!!!!

    This group of friends, Diane, Elna, Fay and Joy decided to take a vacation together in Umbria. Former classmates who now live around the world (Australia, England, Canada and South Africa) met in Umbria. Each day one of the girls decided to do an activity, and today Diane decided to learn how to make pasta! They were great! And we have prepared, TAGLIATELLE with gorgonzola and eggplants, spaghetti alla chitrra with caprese, ravioli filled with ricotta and mushrooms,  maltagliati with courgettes.
    BRAVISSIME!!


  6. Nienke and Maxime : COOKING WITH BLACK TRUFFLES!

    Nienke and Maxime, two beautiful and funny  Dutch friends are in Umbria to write an editorial on my beautiful region! And between the historical and artistic wonders of this generous land, yesterday we went to truffles hunting with Bartolomeo and Rondinella  … and we found 8 BLACK TRUFFLES !! so today we could not to cook them!
    We cooked the risotto with truffles and scallops with truffles: Maxime I am waiting your photographs to publish the recipes!


  7. Buon compleanno Laurie!!!

    This wonderful group of friends (Ann, James, Jon, Eileen, Chris and Laurie) decided to travel to Europe and they stopped in Umbria! And together we celebrate birthday of “funny Laurie”!

    ……what a beautiful couple! and we had a lot of fun cooking together! Lisa, as usual, gave us her warm hospitality and we had a nice lunch in the garden with one of the last sunny days of this long summer:

  9. ….THERE IS A PARTY!!?

    What a beautiful people: Sally Kay Duff, Robert, Daniel, Mark and … …. Please Sally! help me with the names. With all of them last night we cooked a lot:
    vegetable strudel with melted cheeserisotto with mushrooms, colorful turkey , stuffed fig leaves, eggplant in the oven and the chocolate salami.
    We walked in the garden, harvesting fresh vegetables, we have cut-flavored-cooked lots of food, and especially we drunk so much prosecco!
    … .. That’s life!
