  1. STUFFED ARTICHOKES

    CARCIOFI RIPIENI

    Ingredients for 4 people:
    8 artichokes
    4 slices of two days old bread
    garlic
    wild mint
    parsley
    lemon
    white wine
    salt
    pepper

    Clean the artichokes from the outer leaves and cut the tips and put them in water and lemon. Wet the bread in water and when soft, squeeze and season with chopped garlic, mint, parsley, salt and pepper. With this stuffing fill the artichokes. In a deep pan, put olive oil and a clove of garlic, artichokes and make sure that they stay up and tight. Put water and white wine in equal parts, until mid artichokes. Cook over low heat, covered, for at least 30-35 minutes.


  2. BEEF TAGLIATA WITH RED WINE SAUCE

    Choose the cut of veal, between cost with no bone, or rump. 5-7 cm high. With a handful of coarse salt on each side,  grill 5 minutes per  side and cut while still hot , serve still hot with different seasonings. In this case we made a reduction of red wine Montefalco (in a pan, one bottle of wine, 4 juniper berries and 4 peppercorns,  all cooked up to create a creamy sauce), and extra virgin olive oil flavored with rosemary.
