  1. BROCCOLI AND SQUIDS SALADE

    insalata di broccoli e calamari

    Ingredients for 4 people:
    4 squids
    1 lemon
    250 gr. broccoli
    salt
    chili
    parsley
    1 buffalo’s  mozzarella
    Clean the squid and open them in half. Grill in the oven for 15 minutes and when cooked cut them into strips and place in a bow, season with oil, salt, pepper, parsley and lemon juice. Boil the tops of the broccoli in boiling water for 7-8minutes (much better if steamed), drain still crispy.. Arrange broccoli on a serving dish and season with oil, salt and lemon. Arrange over the strips of squid and slices of mozzarella.


  2. SQUIDS WITH PEAS SOUP

    zuppa piselli e calamari

    Ingredients for 4 people:
    3 medium-size squids
    250 gr.  peas
    ½ cup of white wine
    2 cloves of garlic
    1 tablespoon of white sugar
    1 tablespoon cider vinegar
    1 red onion
    parsley
    ½ lemon
    chili
    Extra virgin olive oil
    lemon
    salt
    Cut the garlic into small pieces; in a pan put  the sugar, cider vinegar and add the garlic, cook for 5-7 minutes until the garlic is caramelized. Let it cool by putting the garlic on a sheet of paper stick. Cut the onion into thin slices and brown it with a tablespoon of olive oil, add the peas, salt and pepper and cook for 20 minutes, adding the white wine. Meanwhile, grilled squids, properly cleaned and gutted, and when cooked cut them into strips and seasoned with olive oil, lemon juice, salt and pepper. Blend the peas, and heat the puree. Put the cream on serving dish, add caramelized  garlic then the squids, a sprinkling of parsley and serve it hot.


  3. FILLED SQUIDS

    Ingredients for 4 people
    700 gr. Squid
    3 slices of stale bread
    1 courgette
    1 clove of garlic
    1 onion
    Parsley
    1 lemon
    Basil
    Extra virgin olive oil
    Half a glass of white wine
    Salad
    Balsamic Vinegar
    Salt
    Chilli

    Clean the squid by their inner and peel them. Soak the bread in water, squeeze when  soft and add the onion and garlic thinly sliced, diced zucchini, salt, pepper, basil and parsley. Fill squids with the mixture and close with toothpicks. Bake at 200 degrees for 25 minutes adding white wine and seasoning with salt. When they are cooked, let cool before cutting. Serve it on salad dressed with oil, salt and balsamic vinegar.
