  1. SPITEFUL SALAD

    salad Lettuce

    red chicory

    arugola

    slice of bread

    Gorgonzola cheese

    2 oranges

    Dried berries

    Brown Sugar

    Chili powder

    parsley

    basil

    grain of Almonds

    balsamic vinegar

    oil

    Soy sauce

     

    Wash salads carefully. Toast the slices of bread in the oven and when still warm, spread with gorgonzola cheese and then cut into cubes. Mix the salads. Add the basil and the parsley. Peel an orange  and cut into small cubes. Shredded orange peel and caramelize  in a pan with brown sugar and a sprinkling of chili. Squeeze the juice of the second orange and mix it with olive oil, soy sauce and a teaspoon of balsamic vinegar and season the salad with the dressing. Serve the salad garnished with bread with gorgonzola cheese, oranges into cubes, the grains of almonds, dried berries and candied orange filangeè.


  2. LAMBS’ CHOPS WITH PISTACHIOS AND ORANGE

    Ingredients for 4 people:
    8-10 lamb chops
    50 gr. pistachios
    50 gr. Large ground cornmeal
    The peel of an orange
    salt
    chili
    chive
    1 lemon
    white wine
    Put the meat to marinate in white wine and lemon juice for at least 6 hours.

    To prepare the breading,  toast the pistachios in the oven to grill and then grind coarsely, join the cornmeal, salt, chopped chives and pepper. With holy patience dried orange peels or above the radiator (so it will perfume the whole house) or in the oven. When dry cut into small pieces and add to pistachios. Take the meat  still moist and pass it on prepared powder. Cook the chops in the oven  at 200 ° for 20-25 minutes, and then on the grill for another 5minutes.


  3. Salad of green beans with a sauce of wild mint

    Ingredients (4 people):
    400 gr. Green beans
    wild mint (a lot!!!)
    half Lemon
    Orange rind
    1 clove of garlic
    ½ cup extra virgin olive oil
    Salt
    Cook beans in salted water for 15 minutes, when ready pass them immediately under cold water, to avoid they become yellow and also they will remain crispy. Put in blender the oil, the orange rind, the juice of half lemon ,the wild mint, the garlic and process until creamy.
