  1. MARIA PIA’S CAKE

    This is the classic cake that you eat and say ”how much good is it??” And until it is over now and then you take a piece … .. The recipe is from Maria Pia, Roberto’s mother, whom I thank  for letting me know and taste it, and I curse for how much I eat!

    Ingredients for a cake for 4-6 people
    250 g of flour
    250 g of sugar
    250 g of almonds (with skin) coarsely chopped
    200 g butter at room temperature
    2 egg yolks
    Mix everything with  hands to blend the ingredients to obtain a compact dough, then lie it in a pan, fights well with your hands to level it.
    At this point put it  in the oven at 170 degrees for 30/35 minutes


  2. AMARETTI- ALMONDS’ BISCUITS

    I decided, is time to take out the Christmas tree … first of all because cats make me crazy pulling down all the balls and the second because we’re at the end!
    But first I need to update you on Emiliana’ Christmas cakes and I begin with

    AMARETTI

    700 gr. Sweet almond
    300 gr. Of bitter almonds
    1 kg. of sugar
    7 egg whites
    10 tablespoons of flour
    1 lemon, grated
    First grind almonds then blend all ingredients  and work well the dough with your hands. Then create small  balls and put in a pan on baking paper. Cooking time 20 -25 minutes in the oven at 180 degrees.


  3. ALMONDS’ CANDIES

    Smell of Christmas? … And then let’s start from candies, the ones that make you gain weight just looking at them but they give us so much satisfaction!
    Ingredients for 25-30 biscuits:
    250 gr. almonds
    200 gr. White sugar
    2 egg whites
    A pinch of salt
    Raisins, candied orange, dried banana, and  you like
    Blanch the almonds in boiling water, peel and toast in oven grill for a few minutes. Blend them up to create a mixture,  and  add the sugar. Whip the egg whites with a pinch of salt. Add the egg whites into the mixture and work the dough with your hands. Place baking paper on a baking tray and create small balls with the dough(put them far enough otherwise they will melt and become a single biscuit). Above each ball put an almond, or orange or a slice of banana and so on .. Bake at 180 degrees for 7-8 minutes.


  4. CHOCOLATE AND ALMOND TARTS

    This is really a high-calorie junk …. But today it’s raining!

    Ingredients for 10 tartlets:
    1 package puff pastry
    150 gr. Dark chocolate in block
    10 gr. Philadelphia Cheese
    1 tablespoon white sugar
    30 almonds
    Cut the puff pastry to the size of your molds, and bake in oven for 10 minutes (put above it some dried beans otherwise it would swell during cooking). Melt chocolate in double boiler and when melted add the sugar and Philadelphia and mix well. Spread the chocolate cream over the pastry and garnish with almonds.
