  1. MY PANCAKES

    This is a basic dough which can be used for lots of preparation: my pancakes, filled pancakes or whatever!

    1 kg. white flour

    1 lt beer

    oil to fry

    Mix when the flour with the beer to obtain a soft and elastic dough. Do not add any salt or sugar so you can use it for both solution. In my case I did serve it with honey and almonds as dessert, and with a marinade of cherries’ tomatoes with basilc garlic and chilly. Delicious!


  2. PANCAKES with custard

    PANCAKES with custard
    ingredients:
    150 gr. flour
    10 gr. of butter
    3 eggs
    250 gr. of water
    custard: 2 EGGS-2 AND A HALF SPOONS OF FLOUR-4 SPOONS OF SUGAR-500 ML. MILK –LEMON PEEL- A piece of cinnamon

    Put a saucepan with water and butter, when it begins to boil, add the flour
    all at once and stir vigorously until the mixture becomes a “ball” and is detaches from the edge. Cool the mixture and add one egg at a time, mixing well before adding the next. Take a spoonful of the mixture (I suggest you to use a small spoon, so you can eat more!) and fry in hot oil. Make the custard: Mix reds with a little ’milk, sugar and flour, add more milk, lemon peel and apiece of cinnamon, cook over medium heat stirring constantly with a wooden spoon. When pancakes are cold fill with cream and sprinkle with sugar.


  3. BERNIE’S PANCAKES

    This recipe is not mine but of my magic friend Bernie, who each time is re-inventing and changing it according to the ingredients of the season, but this is the base:
    150 gr. Basmati rice
    Zucchini flowers
    4 tablespoons flour

    yeast in the grains

    beer
    parsley
    basil
    marjoram
    salt
    chili
    Oil for frying
    While the rice boils in salted water for 15 minutes, prepare the batter with flour,yeast and water (I put the beer so it becomes more crispy pancakes) and let it rise for about 30 minutes. Drain the rice and cool it. Chop the pumpkin flowers and cut  all the herbs and add  to the batter, add the cold rice, salt and pepper, and fry the pancakes in hot oil until  brown.


  4. YUMMY PANCAKES

    Ingredients for 7-8 pancakes
    100 gr. flour
    2 eggs
    1 egg
    450 gr. milk
    20 gr. butter
    1 pinch of salt
    1 dash of nutmeg

    To fill:
    120 gr. Sweet gorgonzola
    100 gr. of bechamel
    2 zucchini
    1 onion
    1 clove of garlic
    basil
    thyme
    salt
    chili
    ½ cup dry white wine
    Mix the flour, eggs, milk and flavored with nutmeg and a small frying pan, cook the mixture (liquid) with butter. It will form a small pancake, which I highly recommend you do thin! When the pancakes are ready, prepare the filling. In a frying pan with olive oil, sauté garlic and onion sliced ​​thin, and add the sliced ​​zucchini, basil and thyme. Bake for about 15 minutes, adding the white wine, salt and pepper. When cooked, add the gorgonzola and mix well, to create a paste. Spread the cream on pancakes, roll up and place in a baking dish. Sprinkle with bechamel and mash in oven at 200 degrees for 10 minutes.
