  1. POTATOES AND LENTILS

    I am lucky  to live in Umbria, because I can eat lentils from Castelluccio di Norcia: small, tasty, crunchy cooking ….. what a delight!
    Ingredients for 4 people:
    200 gr. Dried lentils from Castelluccio di Norcia
    1 onion
    2 bay leaves
    1 clove of garlic
    ginger in powder
    A tablespoon of tomato paste
    ½ lt. Vegetable stock
    4 potatoes
    salt
    oil
    chili
    parsley
    Let the lentils soak for 12 hours and then boil in salted water for 25 minutes. In the meantime, brown in oil  onion and garlic  finely chopped. Add tomato paste and a ladle of water and lentils  previously boiled .Cook  about 25 minutes, with bay leaves and ginger, adding  broth of necessity. Season with salt and pepper. Boil potatoes in water when are cooked, cut into slices about 1 cm high, and arrange on a serving plate. Dress with extra virgin olive oil, salt and finely chopped parsley. When lentils are cooked, pour over the potatoes and serve hot.


  2. WHITE VEAL’ ROLLS

    …… I can not resist a lot to be on a diet! Tonight WHITE VEAL ROLLS
    Ingredients for 4 people:
    8 slices of beef silverside
    8 shallots
    1 clove of garlic
    Half glass of white wine
    4 sun-dried tomatoes
    1 large potato
    150 gr. Cooked ham
    125 gr. Of cream
    2 teaspoons sweet paprika
    ½ teaspoon chili powder

    Above each slice of meat  put a slice of bacon and a potato sticks (previously boiled), and close with a toothpick. Sauté in a pan in olive oil, shallots and garlic cut very thin, dried tomatoes cut into thin strips and cook 10 minutes stretching with white wine. At this point, put the rolls and cook for a few minutes on a brilliant fire. Sprinkle with paprika and chili powder, mix well to dust the meat and add the cream, diluted with two or three tablespoons of water and salt. Cook a few minutes brilliant fire and serve with boiled potatoes seasoned with olive oil and salt.


  3. ONIONS AND POTATO PIE

    Ingredients for 4 people:
    4 potatoes
    4 tomatoes
    2 onions
    ½ cup white wine
    SCAMORZA smoked cheese
    Extra virgin olive oil
    salt
    chili
    oregano
    Wash the potatoes and cut, with skin, into slices  of 2 cm. In a pan with olive oil and fry the slices of potatoes, 5 minutes per side. Cut the tomatoes into slices and let them dry in a pan for a few minutes, add salt and pepper. Cut the onions into rings and cook in white wine for 5-7 minutes. Now you can make  the pie by putting a potato slice, a tomato, some onion rings, a sprinkling of oregano. Fix it with a toothpick and bake in oven at 180 degrees for 20 minutes, add the smoked cheese into thin slices only in the last minutes of cooking.
